My perspective was from how it’s applied to people doing keto. You can only have X carbs and you can use fiber to reduce that number, as opposed to not eating them in the first place.

But I get your point. I tried keto for a while (for the diabetic thing). I felt great, my blood sugar numbers dropped to normal, and I lost weight and wasn't bloated. Slept like a log.
Then one day I just realized there was no way I could do this the rest of my life. I think I just have a love/hate relationship with simple carbs now. It's a shame because it really was solving multiple health concerns at once.
I really felt what you said there.
I truly did feel terrific, but you even have to watch things like fruit consumption, and that's where it just got me. Especially in summer, I try to let my carbs be "good carbs" like fruit instead of empty carbs. And although I can deal with low-carb bread, keto breads are just yucky. The one brand I found that didn't have a nasty taste to it was $9 for what was essentially half the size of a normal loaf of bread.
"Regular" low-carb eating is just fine with me. I've been a diabetic for 12 years now and still am not anywhere near needing insulin, so my goal is to just maintain that level. Totally do-able on low-carb foods.
