I don't think any "true" movie fan must see any one single film to consider themselves a movie fan.

As a movie lover i think everyone should see Igby goes down it is an excellent movie and not well known
Fight Club - because of its intense themes and forceful methods of portraying their meaning, never seen another movie quite like it....yet. Worth seeing if you are a movie fan, because then you'll likely see past the violence and destruction and thus enjoy it fully.
I disagree with viddy. Everyone should start with
Godfather
Casablanca
Citizen Kane
The Searchers
Godfather 2
The Adventures of Robin Hood
Gunga Din
Seven Samurai
Unforgiven
North by Northwest
Double Indemnity
Goodfellas
Jean de Florette
Blade Runner
Mr. Smith Goes to Washington
The Man Who Shot Liberty Valance
Chinatown
Maltese Falcon
Bridge on the River Kwai
One Flew over the Cuckoo's Nest
The Quiet Man
Red River
The Treasure of the Sierra Madre
Rear Window
Fort Apache
Mutiny on the Bounty(1935)
High Noon
On the Waterfront
Pulp Fiction
Raging Bull
To Kill a Mockingbird
Ben Hur
Deer Hunter
Witness for the Prosecution
The Producers
Fargo
and then decide what kind of movies you like. But first watch each of the above twice.

I think I know what Jjonlix is gettin at iluv2viddyfilms. Maybe a list of movies that have raised a movie lover's appreciation for the art of filmmaking?
I'll agree with the post above me by uconjack: My list is very similar but here are some additions:
In my opinion: Films by Charlie Chaplin like The Great Dictator (1940) and The Gold Rush (1925).
Also
Taxi Driver (1976)
Schindler's List (1993)
Gone With The Wind (1939)
The Wizard of Oz (1939)
Crouching Tiger, Hidden Dragon (2000)
Apocalypse Now (1979)
A Clockwork Orange (1971)
E.T. (1982)
Once Upon a Time in America (1984)
Dogville (2003)
...
..
.
As well as most movies Directed by Hitchcock, Kubrick, Polanski, Spielberg, Scorsese, Oliver Stone and Woody Allen. I'll include David Lynch and Lars Von Trier because I believe they, through their unique visions have all made significant and influential contribution to the development of film.

And there's always a few films that slip through the net.
