Probably the James Bond films in general with the opening gun-barrel to Bond's pre-credits adventure. Can't get much better than that. Works everytime.

My all-time favorite opening is Apocalypse Now. Use headphones if you can---the helicopter swirls around inside your head on this one, leading to the ceiling fan, with the Doors in the middle ground.
