Brent Spiner, as Data, Lore, and Dr. Noonien Soong on Star Trek: The Next Generation.
Another one I've watched recently is Last Action Hero, which features Arnold Schwarzenegger playing both Jack Slater and himself.

Not sure if this counts, but was watching Neighbors (1981) the other day (one of my favorite cult comedies) and realized that in addition to playing "Captain Vic," Dan Aykroyd is the voice of various announcers & commercials on the TV in the film.

Just became aware of this one on a re-watch.
In Bride of Frankenstein (1935) Elsa Lanchester plays both Mary Shelley in the opening sequence AND the title character.
Interestingly, in the credits she's listed as playing "Mary Wollstonecraft Shelley" but "The Monster's Mate" is listed only as a question mark!
