Colour out of Time
all time: Aguirre: The Wrath of God (by a mile, actually)
Excellent choice

Up there for me Delicatessen (1991) due to the diversity of the objects used to create the soundscape ... best scene when he fixes the bed

Bright light. Bright light. Uh oh.
I know I've posted this elsewhere, but I favor Days of Heaven by Ennio Morricone.

The Days of Heaven score also includes "The Carnival of the Animals: The Aquarium" by Camille Saint-Saëns over the opening credits.

Of course, Morricone has composed many of the best movie scores.
