First off, I don't think this is Clash of the Titans. I'm watching it now. I think this one was even older?
I recall a field of people who were slowly in the process of turning to stone. Some of them were 99% stone and couldn't talk or barely budge, some were early in the process and could still talk and begged for help. This part was slightly traumatizing for me.
The gorgon/medusa was not at all human-looking. It appeared to be more like a big squid or octopus, with a single eye in the middle. At the end, the hero (I'm guessing it was Perseus) manages to stab it in the eye and I remember the eye bleeding or seeping out of its eye socket slightly.
I've spent years off and on trying to figure this out on google with no luck.
