If it's meant as the opposite of emotional then someone like Takeshi Kitano springs to mind.

Kati Outinen just came to mind too. She fits the world of Aki Kaurismäki perfectly.

I wouldn't say stoic necessarily constitutes no emotion whatsoever, just a person who's as direct and composed as possible. Even Bogart's hardboiled detectives still occasionally have angry outbursts or crack a smile.
