So having taken filmmaking courses, and wanting to get into that field myself, a lot of people will crop their movies to a 2.39:1 aspect ratio, and other filmmakers will say that that's 'cheating', because you they didn't shoot with anamorphic lenses in order to crop it. However, how come in the days of film, before digital, no one every seemed to cheat it?

Every movie that is shot on a 2.39:1 aspect ratio is shot with anamorphic lenses. You never see any movies before digital, shot spherical lenses and then cropped to 2.39:1. Why is that? Was it not possible back then?
