Are you misremembering Alfred's quote from
Batman Begins, echoing Bruce Wayne's father? "Why do we fall, sir? So that we might learn to pick ourselves up."
Other than that, if you want "fall off a horse" specifically, they use this common adage in the Ben Stiller comedy
Zoolander, for one (though he explains he's not a gymnast, so how would he know). But I'm sure a version of that aphorism has appeared in many movies and television shows over the years. It's such a common saying it's a cliché.
