The trick is not minding
Amazing Prime recently released many of his films, including his documentaries, for streaming. Over the years I have seen a few of them, Such as Aguirre, Fitzcarraldo, Nosferatu remake, Grizzly Man, and Bad Lieutenant: Port of Call New Orleans. I have enjoyed them all. That said, what does everyone suggest I tackle first?

Fata Morgana
Lessons of Darkness
My Best Friend
Where the Green Ants Dream
Even Dwarfs Started Small
Woyzeck
The Enigma of Kaspar Hauser
Stroszek
Little Dieter needs to Fly
The Ballad of the Little Soldier
Cobra Verde
Heart of Glass

I may have missed others, but those definitely stood out. Many of them I have heard of, especially in Ebert's Great Movie list.

I would start with My Best Fiend*, Little Dieter Needs to Fly, Stroszek, and The Enigma of Kaspar Hauser.

*note that is fiend, not friend

Also check out THIS THREAD for all things Herzog.

Oops! Hahaha. That’s embarrassing. I read it as “Friend”, but “Fiend” absolutely makes more sense.
Thanks for the correction
