Though I liked Affleck & Gal's work in BvS but yeah...I'd love to see Emily Blunt's version of WW too and for the Bat, I think Jon Hamm would fit more than Craig or even Affleck (look at those eyes...those are BATMAN eyes!)
Henry Cavill is a great choice Superman, IMO but the characterization & the treatment as an important character needs to get more attention from the writers as well as Snyder or WB.

Totally agree about Snyder/WB's take on Lex Luthor done by Jesse in the film. They already got Joker; another psychotic, crazy villain is just absurd and unnecessary in this universe, IMO. Moreover, as a character Lex Luthor (according to the original version) he's much interesting as a Smart ass Billionaire evil genius, his character doesn't need any modification, change or different treatment to fit in the DCCU. But for this role, my choice will always be Mark Strong, he deserves it more than anyone.

Sir Ian Mckellan is a living legend and yes, he can nail any part but the best thing in BvS was Jeremy Irons' portrayal as Alfred, IMO.

For Lois Lane, I'm really not sure about anyone who can perfectly fit for the role.
