I honestly don't notice a difference, other than the spatchcock just takes up more room and is more difficult to turn around. I just use melted butter, salt and pepper for my turkey cooking. This time I tried injecting melted butter directly into the meat, so that's new. All turned out pretty tasty, but not much different than a good butter bath up front followed by repeated basting. I should be able to get 4 whole turkey's on the smoker at once. I may try that next year and test selling a few.
