AppleTV+ has a great documentary about Steve Martin
I think my favorite is either Steve Martin back in his stand-up days (got to see him twice back when he was still playing college gymnasiums) or... well, it's a weird toss-up between two very different guys: Nate Bargatze (have seen him twice too, and was laughing the whole time) and Sebastian Maniscalco (I rewatch his various Netflix standup routines quite often and they're always funny).
