Are you thinking of Sean Connery in The Untouchables? Someone breaks into his apartment with a knife. Sean chases him out the door holding a shotgun while insulting him for bringing a knife to a gunfight. But it was a trap. When he exits the door others are there to shoot him. I can't post a link but Search YouTube for Sean knife gunfight

The Red Dwarf episode Justice has a funny scene with this happening.

In The Punisher (Thomas Jane version) he pulls a flick knife out on the guitar playing assassin, "bringing a knife to a gun fight" is referenced

In the Death wish series punks routinely threat Charles Bronson with a knife, and he shots them.

I suppose it's different in that he is the weapon, but the Terminator killing the punks at the beginning of the original film.

Surprised that no one has listed The Mask.
