Hmm... gotta say one you never mentioned... Obi Wan vs Maul (you had Kenobi and Jinn vs Maul).
That last sequence when Obi Wan goes nuts after Jinn is killed... it's the first real time we get to see what a Jedi in the time of the Jedi, could do.
Best sabre fight ever, if a little short.


My favourite though is Luke v Vader in Return Of The Jedi.
The massive emotional lead up to it, the emotional output of Luke, and the music backing it up.
