Only saw the first season (not really my cup of tea) but the only ones who held my attention were Arya and Peter Dinklage's character (Tyrion?).

I personally loved the entire character development of Jaime Lannister and Sansa Stark even if the latter gets too much flack for initial seasons. I love seeing how much they've matured over the course of time.
Joffery Baratheon, Margery Tyrell, Cersei Lannister, Arya Stark, Bronn, Ser Davos, Melissandre, Oberyn Martell, Tywin Lannister, Cat and Ned Stark (:() are some of my other favorites.
